Karin’s Homemade Mayonnaise

  • 2 whole eggs
  • 1 teaspoon salt
  • 1 teaspoons castor sugar
  • 3 teaspoons mustard powder
  • 2 tablespoon white grape vinegar
  • 1 tablespoon lemon juice
  • 500ml sunflower oil
  • 1 tablespoon boiling water


  • Beat eggs in a food processor till light.
  • Add dry ingredients and process.
  • Add vinegar and lemon juice.
  • Process and scrape down the sides.
  • With the motor running pour the oil through the feed tube in a thin, steady stream – use a small jug with a thin spout so the oil doesn’t spill down the side of the processor.
  • At this stage, add the garlic and/or herbs depending on the colour and flavour you want.
  • Process quickly and scrape down the sides.
  • At this stage add the herbs etc.
  • Then add 1 tablespoon boiling water and give it a quick whizz.

For green or herby or garlic mayonnaise add some or all of the following after all the oil has been added:

  • 2 teaspoons crushed garlic
  • 1 teaspoon each dried thyme and oregano or 2 Tablespoon chopped fresh herbs
  • 2 tablespoons snipped chives
  • Generous handful of parsley – chopped (the more added the greener)
  • A few twists black pepper

This recipe makes about 600ml mayonnaise
