Umngazi Thai Meatballs

Ingredients:

1kg beef mince

1cup oats (uncooked)

1/2cup desiccated coconut

2tbsp fish sauce

350ml coconut cream

2tbsp red curry paste

1 bunch fresh coriander (chopped)

Sauce:

400ml coconut cream

400ml coconut milk

2tbsp red curry paste

1 bunch coriander (chopped)

Method:

  1. Preheat oven to 200C.
  2. In a mixing bowl, place beef mince, oats, desiccated coconut, fish sauce, coconut cream, red curry paste and fresh coriander and combine.
  3. Form mixture into balls and place in fridge for 30min for balls to set. Once set, in a frying pan gently fry meatballs to add some colour and place in oven proof dish.
  4. In a bowl, mix coconut cream, coconut milk and red curry paste. Pour mixture over meatballs in oven proof dish.
  5. Place dish in in oven and bake, uncovered, for 30min. Remove from oven and garnish with chopped fresh coriander and serve.
