Summer Key Lime Tart

300g tennis biscuits

150g butter, melted

1x 397g nestle condensed milk

3x medium egg yolks

4x zest and juice of 4 limes

300ml double cream

1x tbsp icing sugar

Extra lime zest to decorate



  1. Preheat oven to 160 C/ fan 140 C/ gas,
  2. Whizz biscuits to crumbs in a food processor.
  3. Mix biscuit crumbs with the melted butter & press into the base and up the sides of a 22 cm loose based tart tin.
  4. Bake in the oven for 10 min. Remove and cool.
  5. Put the egg yolks in a large bowl and whisk with an electric beater for 1 (one) minute.
  6. Add the condensed milk and whisk for a further 3 (three) minutes.
  7. Add the lime zest & juice and whisk for another 3 (three) minutes.
  8. Pour the filling into the cooled base and bake in the oven for 15 minutes.
  9. Once out the oven, allow the base to cool and chill overnight.
  10. When ready to serve, carefully remove the pie from the tin & place on a serving plate. Dollop or pipe the cream onto the top of the pie and sprinkle with the balance of lime zest.
