Soy Marinated Watermelon Salad & Citrus Dressing

Soy Marinated Watermelon Salad


  • 250g watermelon (cubed)
  • 250g buffalo mozzarella
  • cucumber (sliced into ribbons)
  • 250g mini-plum tomatoes (halved)
  • 100g rocket (washed)
  • 500ml soy sauce (dark)
  • avocados (sliced)
  • 250g chickpeas (rinsed and drained)
  • 2tsp black pepper (ground)
  • ½ cup corn starch
  • 2tsp paprika
  • 1tsp salt
  • citrus dressing (to serve)


  1. In a bowl, season watermelon and cover with soy sauce. Set aside for 1hr to marinade before use.
  2. In a bowl combine paprika, salt, cornstarch and chickpeas. Toss and deep-fry until crispy and golden. Drain excess oil on paper towel and set aside.
  3. In a salad bowl or platter arrange rocket, plum tomatoes, cucumber ribbons, avocado slices and marinated watermelon. Tear buffalo mozzarella and place on top of salad.
  4. Sprinkle crispy chickpeas over salad.
  5. Drizzle with citrus dressing and serve.

    Citrus Dressing


    • flat leaf parsley (chopped)
    • 250ml orange juice
    • 50ml lemon juice
    • 75ml granadilla juice
    • 10ml red wine vinegar
    • 125ml honey
    • 125ml sunflower oil
    • 225ml olive oil
    • 2Tbsp red pepper (finely diced)
    • Salt And pepper (to taste)


    1. In a blender on high speed add the juices, vinegar, honey and oils, blend until emulsified.
    2. Now add in the diced peppers and chopped flat leaf parsley.
    3. Season to taste with salt and pepper.
