Serves: 4
Ingredients:
4 Large Chicken Breasts (trimmed)
1 cup Pepperdews (chopped)
125g Brie (sliced)
1tbsp Olive Oil
Salt & Pepper (to taste)
1 large pawpaw (chopped)
2tbsp lemon juice
2tbsp sugar
1 cup water
1 chili
Method:
Preheat oven to 200C/fan 180C. With a sharp knife cut small incision into chicken breast and create a cavity with enough room for stuffing, without breaking making any other holes for it to leak out of. Place pepperdews and brie and blend till coarse, place in piping bag and pipe into chicken breast cavity.
Season chicken breast with salt and pepper and lightly pan-fry in olive oil, just enough to color breast. Place chicken breast on roasting tray and place in preheated oven and roast for 20min till done.
For the sauce place pawpaw, water, sugar, lemon juice and chili in saucepan, bring to a simmer and cook until soft. Allow to cool and place contents of saucepan in a blender and blend until smooth (you may add additional water to attain your desired consistency.
Serve chicken with cauliflower mash and greens and pawpaw coulis.
4 pork chops
2 tbsp chopped spring onion
2 tsp wholegrain mustard
50g cheddar
1 tsp sour cream
salt & pepper (to taste)
Heat oven to 200C/fan 180C. Season chops with salt and pepper. Place the chops in a large, shallow roasting tray and bake for 15 mins.
Mix together the mustard, cheddar sour cream and spring onion. Spread over the top of the chops.
Return to the oven for 5 mins or until the cheese is melted and bubbling. Serve with some mashed potatoes and greens.
