Love & Appreciation are always felt in the small things…here are some tips to spoil mom on mother’s day!

Afternoon treat with a cup of tea

Chocolate Hedgehog recipe:

Ingredients

Base

  • 350g butter
  • 350gr castor sugar
  • 8 tablespoons cocoa powder
  • 4 tablespoons desiccated coconut
  • 2 egg, lightly beaten
  • 1 cup broken walnuts
  • 500g packet shredded wheat biscuits/tennis biscuits, broken into pieces

Method

In a saucepan melt butter, sugar and cocoa over a medium heat for 3 minutes. Stirring to ensure sugar dissolves. Remove from heat add coconut, egg, walnuts and biscuits.

Press mixture into a baking paper lined 28cm x 18cm slab pan. Chill for 1 hour.

Chocolate topping

  • 250g Cadbury dark cooking chocolate, chopped coarsely
  • 50g butter

Melt chocolate and butter in bowl over simmering water. Spread over slice. Allow to set in refrigerator for 20 minutes. Slice with hot knife into pieces.

Rosemary is the closest herbal flavour to Juniper berries. One fresh sprig of Rosemary may be used as a substitute for every 4 Juniper berries.

Method:

Chill your favourite Gin glass

Gently rub the Rosemary between your hands releasing all the flavours

Break the sprig in half and place in glass

Add your choice of garnish

Add ice

Add tonic

Gently stir and enjoy!
