Almond and Walnut Baklava

Ingredients:

10 sheets phyllo pastry, thawed if frozen

3 cups (300g) chopped almonds

3 cups (300g) chopped walnuts

1 TBSP ground cinnamon

1 tsp ground cloves

2/3 cup (180g) butter, melted

Syrup:

2 ¼ cups (450g) sugar

1 ¼ cups (310ml) water

6 TBSP honey

2 tsp lemon juice

½ tsp vanilla essence

Method:
  • Preheat the oven to 200 degrees C.
  • Butter a large oven roasting pan.
  • Lay the sheets of dough out flat and cover with waxed paper and a damp kitchen towel. (This will stop them from drying out.)
  • Mix the almonds, walnuts, cinnamon, and cloves in a large bowl.
  • Fit one phyllo sheet in the pan and brush with butter.
  • Fit another sheet on top and brush with butter.  Place another 3 sheets on top and sprinkle with the nut mixture.  Brush each sheet with more butter.  Repeat until all the almond mixture is used up, finishing with a layer of pastry.
  • Cut the baklava into squares and drizzle with the remaining butter.
  • Bake for about 30 minutes or until golden brown.
  • Syrup: Place all the ingredients in a medium saucepan and bring to a boil.  Boil over low heat for 10-15 minutes, or until deep golden brown and syrupy.
  • Drizzle the syrup over the baklava after removing it from the oven.
  • Leave to cool.
