Lemon Yoghurt Cake

Ingredients:

  • ¾ cup sunflower oil
  • 2 eggs
  • 1 tablespoon lemon rind
  • 2 tablespoon fresh lemon juice
  • 1 cup plain yoghurt
  • 1 ¾ cup castor sugar
  • 2 cups self- raising flour
  •  

    Icing:

  • ¼ cup fresh lemon juice
  • ¾ cup white sugar
  •  

    Method:

  • Turn oven onto 180°C
  • In a large bowl mix all the ingredients – mix with a metal spoon
  • Pour into greased round ring tin
  • Bake for about 35 min at 180°C
  • To make icing – place sugar and lemon juice into a bowl and just stir twice – drizzle over cooled cake and it will form a crust
