FLORENTINE TART

Crust:

  • 12 Tablespoons butter
  • ½ cup castor sugar
  • 1 egg
  • 1 Tablespoon oil
  • 2 ½ cups flour
  • 1 Teaspoon baking powder
  • ½ Teaspoon salt
  • 150g dark chocolate melted with 3 tablespoons milk
  • Preheat oven to 180c
  • Cream butter and sugar, add egg and oil, continue beating
  • Add dry ingredients and process until dough forms
  • Press into bottom and up sides of 24cm loose tart tin or 25 cm loaf tin
  • Prick and bake 10 – 15 minutes
  • Remove from oven and spread with melted chocolate mixture cool slightly

Topping:

  • 1 ½ cup treacle brown sugar
  • 2/3 cup milk
  • 12 Tbs butter
  • 500 glace fruit mix
  • 250g red glace cherries
