Chocolate Rum Fridge Cake

Ingredients:

  •  250g butter
  • 250g dark chocolate
  • 2 eggs
  • 2 Tablespoons castor sugar
  • 1Tablespoon rum (can be left out)
  • 1 packet Marie biscuits

Method:

  •  Place butter and chocolate in a double boiler.
  • Let butter get a bit cool.
  • Beat eggs and sugar with whisk and add in the slightly cooled melted butter
  • Add the melted chocolate (not too hot –must be slightly cooled) to the egg mixture – or you could make scrambled egg!
  • Stir in the rum and mix well
  • Crush biscuits into small pieces – not powder
  • Stir in broken biscuits
  • Pour into loaf tin lined with glad wrap
  • Put in freezer and let get solid. (overnight is best)
  • Turn out of tin and serve thin slices.
  • Goes really well with thinly sliced oranges
  • Keep in freezer – just keep wrapped.
