Chocolate Rum Fridge Cake Ingredients: 250g butter 250g dark chocolate 2 eggs 2 Tablespoons castor sugar 1Tablespoon rum (can be left out) 1 packet Marie biscuits Method: Place butter and chocolate in a double boiler. Let butter get a bit cool. Beat eggs and sugar with whisk and add in the slightly cooled melted butter Add the melted chocolate (not too hot –must be slightly cooled) to the egg mixture – or you could make scrambled egg! Stir in the rum and mix well Crush biscuits into small pieces – not powder Stir in broken biscuits Pour into loaf tin lined with glad wrap Put in freezer and let get solid. (overnight is best) Turn out of tin and serve thin slices. Goes really well with thinly sliced oranges Keep in freezer – just keep wrapped. Back to blog homepage
