Date and Coconut Squares

(This recipe makes about 25 squares)

Ingredients:

  • 115g butter
  • ½ cup sugar
  • 1 packet of dates without pips – chopped small (250g)
  • 1 egg
  • 1 teaspoon vanilla essence
  • 1 packet of Marie biscuits
  • ½ cup of grated coconut to cover squares
  •  
    Method:

  • Prepare a baking tin / tray (about 4cm deep, 30 cm long and 20cm wide) line with foil and spray with spray and cook and sprinkle with some of the grated coconut
  • Melt the butter and sugar over a medium heat
  • Add the chopped dates and boil until soft – take off heat and allow to cool a little bit
  • Break the egg into a small cup and add vanilla essence and mix lightly
  • Add to the date mixture
  • Break the Marie Biscuits into small pieces – not powder
  • Mix all together and press into the dish tightly
  • Sprinkle a little coconut on the top of the biscuits
  • Put in the fridge to set properly – leave for at least 1 hour
  • Cut into little squares – best kept in the fridge
